This Sunday will be New Year for us, I think everyone in Malaysia start buying New Year biscuits. My mum also did the same thing every year when we were young, till the year when I was 15, she said " I want to make pineapple jam tart for this new year".I doubted her, wonder if she was kidding, because we always buy, never heard that she can bake before. But still, I agreed to peel and cut 15 pineapples for her. She cooked the pineapples the day before and make the tarts with my sisters.The tarts turned out to taste very nice supprisingly and from that year onwards, we started to make our own pineapple tarts for new year. Now, I'm in Ukraine, I make this tarts too every Chinese New Year here. I know many people out there are interested in how to make this wonderful delicacy. So, let me explain here how is it make.
To make a tasty pineapple jam tart, first of all, you have to understand how it should taste like. The main idea here is the biscuits should taste salty and the pineapple jam on the other hand tasted sweet. The saltiness and sweetness when come into a combo created a prefect pineapple jam tart.
The ingredients for pineapple jam tarts are:
A:Biscuits ingredients:
1.Butter(1kg)
2.Flour(1/2kg)
3.Egg yolk(1-2)
4.Cooking cheese(less then300g, grated)
5.Salt to taste
B:Pineapple jam
1.Canned pineapples in ring shaped(3 x 850ml)
2.Sugar
STEPS:
1. Begin with blending the pineapples. (Note: Blend without cutting the rings, so that the
pineapples will not become too smooth after blending )
2.Cook the blended pineapples till they become jam. Add sugar tablespoon by tablespoon till the
sourness of pineapple disappear and the pineapples turn brown and sticky in consistency. The
jam can stick to the spatula when you lift it up.
3.Set it aside to let it cool down.
4.Start making the biscuits by adding all ingredients into a basin and knit the dough.Add not
more than 1/4kg flour as needed if you feel that the dough is too wet and sticky.
5.The next step is to fold the dough into the shape you want your pineapple jam tarts to be.
Apply egg yolks on the surface of the tarts.Then, bake in oven 180 degree cel till golden brown
in colour, usually 10 min.
